Your New Favorite Pumpkin Pie Recipe

As seen here and here, there are so many simple ways to avoid gaining the dreaded holiday weight without losing any of the tastiness of the meal. For instance, pumpkin pie has always been my favorite indulgence — and no matter how calorie-heavy this Thanksgiving staple may be, it's always a reason to save room for dessert. In an effort to avoid over-indulging myself, I decided to try Blogilates' healthy pumpkin pie recipe.

This alternative pumpkin pie recipe takes the average slice from 323 calories down to just 221 calories per serving. In addition, it's easy and cost-effective, and I can't wait to try it out. For more visual learners, also check out Blogilates' YouTube video of the pumpkin pie process.

Healthy Pumpkin Pie

Ingredients (10 servings)

  • 2 cups canned pumpkin
  • 1/4 cup agave
  • 4 egg whites
  • 1/4 tsp sea salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger

Crust Ingredients

  • 1 cup ground almonds
  • 3/4 cup whole wheat flour
  • 3/8 cup coconut oil
  • 10 drops of liquid stevia
  • 1/4 tsp sea salt
  • 1/4 tsp vanilla extract

Directions:

Melt the coconut oil and then mix all of the crust ingredients together. Spread and flatten it into a pie pan.

Melt the coconut oil again and mix all of the filling ingredients together. Make sure it's not chunky!

Bake at 350 degrees F for about 45 minutes until the top is a rich, orange color.

Chill for 30 minutes.

Cut and enjoy!
