Two Ways to Eat Paleo Pesto Chicken

Meal prepping is easy when you have Mary Shenouda, aka Paleo Chef, and her pistachio pesto chicken recipe! It’s a super easy recipe that uses pistachios instead of pine nuts to make a paleo pesto. Plus, you can enjoy it many different ways like with a baked potato or on a kale salad.

PISTACHIO PESTO RECIPE:

1 1⁄2 cups Fresh basil, chopped

1 cup Shelled pistachio nuts

2-3 Cloves garlic, minced

1 tsp red pepper flakes

1/2 cup extra virgin olive oil

Juice from 1⁄2 lemon

1 tbsp. Raw honey

1 tsp. Salt

Add ingredients to food processor/blender and blend to desired consistency. Enjoy with a chicken and kale salad, baked potato, or whatever your heart desires!
